Refinishing
Every once in a while, you may want to refinish your board to make it look pretty again. This is optional. Your board does not need finish on it to be effective. Wood is naturally anti-microbial, and adding excessive finish to your board can inhibit those anti-microbial properties. If you want to add a coat of finish:
Wash and dry your board (dry for 24 hours).
Hand-sand the areas you’d like to apply finish with 400 grit sand paper. Remember to wear a dust mask!
Clean the wood dust from the board by wiping the dust with a damp paper towel. This is very important to remove the dust.
Wait 30 minutes to an hour for the board to dry.
Apply 1 coat of Sutherland Welles Botanical Polymerized Tung Oil with a paper towel to the areas (read the directions on the can). Remember to be in a well-ventilated area when finishing and/or wear a respirator. Nitrile gloves are very useful to keep your hands clean.
Wait 10-15 minutes for the finish to penetrate the wood.
Wipe the Tung oil completely off. You must make sure any excess Tung oil is removed from the board.
Allow to dry for 24 hours. If it feels tacky, allow the Tung oil to completely dry before use. The polymerized Tung oil is usually dry within a day but can take up to a few days to dry. However, Tung oil doesn’t fully cure until 7-30 days. Light use during the cure time is recommended.

Resurfacing
( For the Ambitious, Curious Woodworkers)
Resurfacing your cutting board will restore your board to a like-new condition. I would only recommend this option if your board has seen very heavy use, deep knife marks, and all of the finish is worn off. If food particles are getting stuck in the board it’s time to resurface.
Make sure your board is clean and dry. Evenly sand the entire board with 80 grit until no more knife marks are visible. 80 grit will take longer than the rest of the grits, but have patience, all the knife marks must be removed on this step because later grits will not remove them.
Once, no knife marks are visible, you may move onto the higher grits. In order, evenly sand the entire board with 120, 180, and 220 grits. Don’t forget to round over the edge by hand-sanding.
Water pop the grain by wiping the sanded surface with a damp paper towel. And allow to dry for 10-30 minutes.
Evenly hand-sand the entire board with 320 grit.
